Springfield 'Wild Yeast' Chardonnay 2016

Tasting Notes

Jan 2019 - True to its name, Wild Yeast Chardonnay is fermented using the natural yeasts that are found on the skins of the grapes. Unwooded and fermented in underground cement tanks, this slow process can take from 6-9 months to finish. A risky method, but the end result is a wine that gives more expression and nuance than a wine made using commercial yeasts. The 2016 Wild Yeast Chardonnay has a honeyed top note meshed into the ripe apple and apricot scented nose, which carries over into the palate. Medium fuller bodied, this has a creamy mouth feel and nice countering acidity, which plays off nicely against the rich apple and stone fruit flavors. Drinking beautifully as we speak this should be enjoyed over the next couple of years.
