Tasting Notes

July 2017 - The 2016 Bon Vallon Chardonnay is an unwooded version that was sourced from soils rich in limestone and broken mountain rock that was matured on fine lees, with weekly stirring, for six months. The end result is a wine that is quite rich in texture and fruit flavor, something you will not find in most unwooded Chardonnay. Mouth filling with stone fruit flavors of peach, apricot, along with pear, nuanced with a hint of ginger and citrus oil, everything is kept fresh and lively by a vein of acidity that runs through the wine. Showing well on release, this should continue to drink impressively over the next 2-3 years.

Toasty aroams of grilled apple, peach and honeycomb lead the way on the nose of this attractive wine, though with some restraint and overall balance, thanks to supporting acidity and ripe, juicy fruit flavors on the palate. Notes of sweet orange oil and ginger-peach tea grace the medium-length finish. Drink now–2019.



Winemaker Notes

Soils rich in limestone and broken mountain rock on De Wetshof’s site-specific vineyards allow this wine to emit optimum varietal expression. An unwooded wine, Bon Vallon has a brisk and clean freshness leading into a wide spectrum of classic flavors including citrus, wild flowers and grilled nuts, with a nuanced minerality on the aftertaste.
The succulent palate structure makes this an ideal food wine, superb with oysters, cream based pasta dishes, light curries as well as roast port and veal dishes.
