89 pts Stephen Tanzer's IWC (ST) Good deep red. Aromas and flavors of currant, plum, licorice and fresh herbs are complemented by deeper-pitched notes of mocha and nutty oak. Broad, round and intense, with insidious ripe acidity giving shape and energy to the glyceral middle palate. A flavor of black raspberry emerges and carries nicely through the ripely tannic finish. Alluvial soils irrigated with water from the Andes Mountain Range. 950 meters above sea level. Vineyard conducted by overhead trellis system, early shoot positioning to allow a correct airing and sunlight reception of the grape, rational thinning of clusters, analytical control of physiological and polyphenolic maturity, harvest planning based on grape tasting in the vineyard. Double selection of grape clusters and berries, destemmer, gentle crushing, free run juice, fermentation with autochthonous yeasts, prolonged maceration based on tastings, spontaneous malolactic fermentation, soft pomace pressing, auto clarifying racking, natural stabilization, bottling in winery. |
