Cabernet is often thought of as the king of red wines, and with good reason. It has retained its popularity for centuries and is one of the most widely planted and collected wines in the world. In Bordeaux it forms the major part of left bank blends, and in Napa Valley it is usually bottled as a single varietal, and both versions are highly prized by collectors the world over.
Cabernet prefers a long growing season with well-drained sandy and gravely soils, although it can do well in many different regions across the globe. Cabernet is one of the most tannic wines today, which, along with the high acid levels, allows Cabernet to age for decades. There has been a trend by winemakers of making Cabernet for earlier consumption. In its youth, Cabernet can be “closed” or it can demonstrate fresh cherry and currant fruit flavors. As Cabernet ages, it starts to open up and display the cedar, cigar box, cassis, and chocolate flavors that it is well known for.
Cabernet does well in many regions of the southern hemisphere. South Africa is making some single varietal bottlings and Cabernet blends that display beautiful earthiness combined with a core of dark fruit flavors. Australia and Chile are making similarly good Cabernet based wines.
