The 2007 Cabernet Sauvignon is a little subdued with moderate aromas of cassis, black olive and smoked game plus an appealing mushroomy / earthy character. Elegant and medium-bodied, the palate lends medium-high acid and firm fine tannins. The finish is long. Still a touch mute and tight, give this wine another 2-3 years in bottle and drink 2013-2022+.
