Winemaker Notes
Hand picked estate grown. Open fermentation for 10 days. Temperature controlled at 25ºC maximum. Basket pressed and matured for 12 months in French Oak Hogsheads. Single vineyard (Estate produced). Planted 1999. Minimal irrigation and harsh pruning to keep tonnage = 2.5 t/acre.
