The Ondine label is a limited in quantity production, hovering around 500- 700 cases depending on vintage, and is a true expression of the varietal, without any overt manipulation towards a house style. This allows winemaker Theo Basson the opportunity to get a true feel for the vineyards and terroir from which the grapes are sourced for the final wine.
The 2005 Ondine Cabernet Sauvignon offers excellent varietal definition and good complexity. The nose is quite captivating combining a toasty overture with some dusty dark chocolate, cedar spice and a subtle undercurrent of ripe capsicum, paprika and Cabernet’s leafy character flowing into the darker cassis and plum fruit aromatically. Medium fuller to fuller bodied and possessing riper, finer grained tannins the palate shows beautiful balance and structure that suggests this should drink well over the next 2-3 years with ease. What impresses us about this wine is the engaging aromatic profile and the core of darker red and dark currant and cassis fruit nuanced with some subtle underlying smokiness and earthiness on the finish. Possessing beautiful sweet fruit and a fleshy texture this is quite impressive for the money.
