Notes
Fresh grass and guava notes on the nose. The palate is crisp with some pear, sherbet and lime character. The midpalate and finish are crisp and fresh with a lingering citrus note on the aftertaste. Ideal summer aperitif!
88 pts Stephen Tanzer’s International Wine Cellar Pale silver-yellow. Vibrant nose combines lime, gooseberry, grapefruit peel, licorice and dusty herbs. Dense and glyceral but penetrating, with green tropical fruit flavors dominating. Today the wine’s thickness and acidity seem a bit out of joint, and some alcoholic warmth gives the finish an aggressive character.
Winemaker Notes
Fermented in Stainless steel tanks at temperatures ranging from 8-14 Celsius. A small portion fermented in Biodynamic concrete egg. Matured on lees for 7 months. Bottled under screcap to retain freshness and ensure quality.
We use a number of crushing and pressing methods to find different flavor profiles from the vineyard and to enhance the natural zesty character of the Sauvignon Blanc.
