87 pts Stephen Tanzer International wine Cellar July/Aug 2007 Dark purple. Dusty bitter cherry, dark chocolate and espresso tones on the nose, with a subtle hint of dried violet. Opens with ripe blackberry and boysenberry flavors but firms up with air, taking on a dried cherry tone. The fresh acids carry into the finish, brightening the wine's dark fruit flavors. Give this some time in the decanter to allow it to gain in flesh. |

Varietal composition: 100% Shiraz
Wood treatment: Seconds Oak barrels mainly American.
Length of barrel maturation: 16 Months.

I believe our Company can produce up to 50,000 cases of this quality wine.
I wish to pursue this style, price and this level of quality at that case level.
Crushed in a roller crusher. Fermented on Skins for 7 days the free run then placed in second’s barrels.
After Malo the wine racked readjusted pumped back in barrels until filtering and bottling. The blend for this was completed after the first racking so the wine was married 12 months ago.
This is a style of wine winning many hearts around the world and the fact that part proceeds go to great cause gives me such pleasure to produce it. |
