Tasting Notes

This wine is a classic blend of the three most traditional varieties grown in McLaren Vale for more than a century. Our previous experiences in France and Spain encouraged us to plant these varieties with the intention of making a wine that captures all those traditions while giving it a modern edge. Color: dark ruby Nose: dry spices, with hints of Turkish Delight Palate: richer than previous years, with black cherries, licorice and ground pepper

Food Accompaniments

Best enjoyed with Grilled Aubergines, Herbed Sword Fish filets, Steak Tartare.

The 2006 Tipico is a blend of 40% Grenache, 40% Monastrell, and 20% Shiraz aged in seasoned oak for 15 months. Dark ruby-colored, it has an alluring perfume of cedar, tobacco, wild cherry, and blueberry. On the palate it is easygoing, seamless, and already complex. Drink it over the next six years.

Medium red. Peppery redcurrant and dried cherry aromas are complemented by pungent herbs and flowers. Understated red berry flavors could use a bit more fat but are pleasantly brisk and focused. Finishes with good cut, and no tannins that I can find. I’d drink this now.



Winemaker Notes

The grapes are from our vineyard and were all hand picked: Grenache at 14.4º Bè and Monastrell (also known in Australia as Mataro or Mourvèdre in France) at 14.8 Bè in late April, while Shiraz in mid March 2005 at 14.5º Bè. The varieties were fermented separately in 1.5 ton stainless steel and 3 ton concrete open fermenters, with some whole bunches and regular hand plunging. Allowed to reach reasonably high temperatures, up to 30º C. Macerated on skins for 3 to 4 weeks after fermentation in order to gain better palate structure (without commercial tannin added) even if this may sacrifice some fruitiness and color. Pressed straight into barrel where Malolactic Fermentation occurred spontaneously. Removed from barrel after 15 months, blended and allowed to settle in tank naturally. Bottled in May 2007 by gravity filling with screw caps, labeled and packaged by us, with our own equipment ; we consider this, essential to give each wine individuality and to keep full control over the quality.

Cascabel Winery is located on a gentle slope at the southern end of McLaren Vale, and predominantly planted with Spanish varieties. Their two trained winemaker/owners Duncan Ferguson and Susana Fernandez are highly committed to “in house production” with traditional European winemaking techniques using handpicked and dry grown, low yielding grapes. The results are wines that reflect variety and soil personality, as well as that of the owners.
