Tasting Notes

Rich purple / red colour, Black olives, berries, earthy and leather characters on the nose with vanilla and cinnamon – spice aromas Strong cigar box and nutty flavours, Meaty … Strong spicy complex tannins on the palate that finishes in a long lingering aftertaste. Color – ruby-red Nose – Aromatic --- Gamey, wild berries and spicy Taste – Velvety and intense body, balanced tannins with lovely long finish

Food Accompaniments

To be enjoyed with roasted beef, spicy chicken dishes and pasta dishes.

4 Starz - John Platter Wine Guide 2007 Modern, showy voluptuous, lashings creamy vanilla- oak. Intensity continues into, raspberries, cherries, with prociutto hovering in background.

88 pts Stephen Tanzer International Wine Cellar Cassis, licorice, spicecake and game on the nose, along with a whiff of black olive. Sweet, lush and pliant but currently less complex than the Matt Black blend. Broad, slightly grapey flavors of dark berries and licorice are given shape by fine, dusty tannins and a finishing edge of acidity.

Winemaker Notes

Crushed and de-stemmed. Pre-soaked for 2 days before selected yeast inoculated with controlled fermentation in stainless steel tanks. After fermentation pressed with free-run and press juice together . Assessed, blended and matured in French, American and Hungarian oak (300 Litre Barrels) Egg white fining followed by soft filtration and bottling. Bottle maturation from 12 – 18 months.
