A big ripe fruit spicy McLaren Vale Shiraz.Ripe dark cherry on the nose,with a hint of chocolate and mocha.Big full rich palate with just a hint of oak.Lovely soft ripe tannin complements the fruit driven finish.A soft,weighty traditional McLaren Vale Shiraz.

Food Accompaniments

T-bone steak,rib-eye and all red meats.Game pie.

The opaque purple-colored 2007 Little Ox Shiraz was aged in seasoned French oak for 24 months. It displays a Port-like bouquet with notes of black cherry, blueberry, and mocha. Medium to full-bodied, smooth-textured, layered, and succulent, this pleasure-bent effort has a remarkably long finish for its modest price. It over-delivers big-time.

Bright ruby. Black raspberry, cherry pie and cola on the nose. Sweet, supple and fine-grained, with firm acids enlivening the vivid flavors of raspberry and candied flowers. Quite fresh for such a dense wine. Finishes with very good spine and length, repeating the cola note.

Winemaker Notes

The fruit was destemmed and crushed and chilled into open fermenters.Following 2 days cold soak,the must was inoculated with a chosen Rhone yeast strain.The cap was hand plunged four times a day util sugar dryness.The wine is then drained off,the skins pressed and the combined wine pumped straight to barrel,where malo lactic fermentation takes place.The 2007 Little Ox was matured in older French oak barriques for 24 months before racking out of barrel.A gentle filtration preceeded bottling.
